Easy Salmon Recipes - Tomatoes Stuffed w/Salmon and Pasta

Here's an easy salmon recipe that is perfect for
a nice, light and tasty lunch.

Ingredients:

(1) cup of 4-color corkscrew macaroni
(1) can of salmon (7.5 ounce) - drained, flaked & skin and bones removed
(1/2)cup of plain, low fat yogurt
(1/2)cup of shredded cucumber
(1/4)cup of shredded carrot
(2) tablespoons of low calorie mayo or salad dressing
(1/4)teaspoon of dried dillweed
(4) medium tomatoes


Preparation:

* Cook macaroni per package instructions. Drain and set aside
* Combine salmon, yogurt, cucumber, carrot, mayo(or salad dressing), dillweed, 1/4 tsp. salt & 1/8 tsp. pepper - toss with the pasta - cover and chill a minimum of 4 hours.
* For tomato cups, cut out 1/2 inch of the core of each tomato. Invert and cut from top to (but not quite through)the stem end, making a total of 6 wedges.
* To serve, place the tomatoes on plates(4). Spread the wedges slightly apart, and fill with the salmon & pasta mixture

Serves 4 - enjoy!

Easy Salmon Recipes - Salmon Filled Breakfast Omelet

Here's a recipe for salmon that is perfect for
a weekend breakfast (or brunch for that matter).

Ingredients:

(3) Eggs, with yolks and whites separated
Dash of salt
Dash of pepper
Non-stick cooking spray
(1) ounce of Neufchatel cheese, cut up
(2) ounces thinly sliced smoked salmon, chopped
(1) tablespoon snipped fresh parsley


Preparation:

* Preheat oven to 350
* In a small mixing bowl, use an electric mixer and beat the egg whites with the salt and pepper until stiff peaks form (tips stand straight)
* In another bowl, lightly beat the yolks with a fork, then fold the whites into the yolks
* Spray a 10-inch skillet with the non-stick spray, and warm over medium-high heat, then spread the egg mixture into the pan
* Cook 3 to 5 minutes, or until the bottom is golden
* Place the skillet into the oven
* Bake for 3 minutes, or until the omelet is nearly dry
* Add the cheese, salmon and parsley to the top of the omelet
* Bake an additional minute, or until the cheese is melted
* Fold the omelet in half and divide into servings

Easy Salmon Recipes - Poached Salmon with Caper Sauce

Here's how to cook one of the classic easy salmon recipes . I
make this recipe at least twice per month.

Ingredients:

(4) 4-ounce fresh or frozen salmon steaks, 3/4 inch thick
(1) cup chicken broth
(1/4) cup dry white wine
(4) lemon slices
(2) tablespoons of water
(2) teaspoons of cornstarch
(2) teaspoons of drained capers
(2) cups of shredded zucchini
dash of pepper

Preparation:

* Thaw salmon - rinse and pat dry with paper towels
* In a 10-inch skillet, combine chicken broth, wine and pepper. Bring to a boil, then reduce heat. Place salmon in the skillet, then place lemon slices on top of the salmon
* Cover, then simmer for 8-12 minutes or until the salmon flakes easily when fork-tested. Remove salmon and lemon. Keep the salmon warm and discard the lemon
* Gently boil the broth mixture, uncovered, for approx. 2 minutes until reduced to 3/4 of a cup
* Combine water and cornstarch, then stir into the broth mixture
* Stir in the capers, then cook and stir until thickened and bubbly - then cook and stir an additional minute
* Divide zucchini evenly onto 4 plates, then place salmon atop the zucchini
* Spoon broth sauce over the salmon
