Here's how to cook one of the classic easy salmon recipes . I
make this recipe at least twice per month.
Ingredients:
(4) 4-ounce fresh or frozen salmon steaks, 3/4 inch thick
(1) cup chicken broth
(1/4) cup dry white wine
(4) lemon slices
(2) tablespoons of water
(2) teaspoons of cornstarch
(2) teaspoons of drained capers
(2) cups of shredded zucchini
dash of pepper
Preparation:
* Thaw salmon - rinse and pat dry with paper towels
* In a 10-inch skillet, combine chicken broth, wine and pepper. Bring to a boil, then reduce heat. Place salmon in the skillet, then place lemon slices on top of the salmon
* Cover, then simmer for 8-12 minutes or until the salmon flakes easily when fork-tested. Remove salmon and lemon. Keep the salmon warm and discard the lemon
* Gently boil the broth mixture, uncovered, for approx. 2 minutes until reduced to 3/4 of a cup
* Combine water and cornstarch, then stir into the broth mixture
* Stir in the capers, then cook and stir until thickened and bubbly - then cook and stir an additional minute
* Divide zucchini evenly onto 4 plates, then place salmon atop the zucchini
* Spoon broth sauce over the salmon
