Canned Salmon Recipes - Salmon & Herb Spread

Here's an easy canned salmon recipe that is very simple to prepare and would be perfect as a baguette spread, or even a nice salmon sandwich spread, for today's lunch!

Ingredients:

(1) cup of plain nonfat yogurt
(1) 15 ounce can of water-packed salmon, drained
(2) tablespoons of finely chopped green onions
(1) tablespoon of fresh parsley, minced
(1) tablespoon of low-calorie mayonnaise
(1/4) teaspoon of dill weed
(1/4) teaspoon of thyme
(1/8) teaspoon of salt


Preparation:

* Put the yogurt in a strainer (lined with a large coffee filter or cheesecloth. Drain over a bowl for a minimum of 1 hour.
* Combine all the remaining ingredients in a different bowl.
* After the yogurt has drained, fold the yogurt in with the other ingredients. Store in an airtight container, then serve chilled.

Makes approximately 1.5 cups of salmon spread - enjoy!

Easy Salmon Recipes - Grilled Indian Teriyaki Salmon

Here's a easy grilled salmon recipe that is very simple to prepare. It serves 4, and would be perfect as a main dish for tonight's dinner!

Ingredients:

(4) 6 ounce salmon steaks
(1/8) cup of chicken or vegetable bouillon
(1) tablespoon of soy sauce
(2) tablespoons of lemon juice
(1/4) teaspoon of powdered ginger
(1/4) teaspoon of cumin
(1/4) teaspoon of ground coriander
(Dash) salt and black pepper


Preparation:

* Place the salmon steaks in a shallow pan. Combine the bouillon, soy sauce and lemon juice - then pour over the salmon steaks. Now add the seasonings.
* Marinate, covered, for at least 2 hours in the fridge - turning occasionally.
* For cooking, place the salmon steaks on a foil-covered broiling pan. Spoon marinade over each steak and place under the broiler (on low heat) for 8-10 minutes, or until slightly brown on the edges.
* Turn steaks, then marinade again. Broil for an additional 8-10 minutes.

Grilled Salmon Recipes - Grilled Salmon with a Creamy Red Pepper Sauce

In case you didn't know already, eating salmon regularly is one of the best self improvement tips you'll ever receive. I know it has paid many dividends health-wise for me.

Here's a grilled salmon recipe that prepares in 15 minutes. It serves 4, and would be perfect as a main dish for tonight's dinner!

Ingredients:

(1/4) cup of fresh lemon juice
(1) teaspoon of a Dijon-style mustard
(4) 5 ounce salmon steaks
(1/2) roasted red bell pepper, medium size
(1/2) cup of plain low fat or non fat yogurt
(1/2) cup of low fat sour cream
(1) teaspoon of dried tarragon
(1/8) teaspoon of salt
(optional: tarragon sprigs for garnish)


Preparation:

* Preheat broiler and line the broiler pan with aluminum foil.
* Combine the lemon juice and mustard in a small bowl - then mix well.
* Brush the mustard mixture over the salmon steaks, then cover loosely with plastic wrap and refrigerate for 10 minutes.
* Now for the sauce - process the roasted red bell pepper in a blender until smooth. Now add the yogurt, sour cream, tarragon and salt and process until combined - then set aside.
* Place the salmon on the prepared broiler pan and broil (4 inches from the heat), turning once, for about5 to 6 minutes or until the salmon flakes easily with a fork.
* Spoon sauce equally on four plates and place the grilled salmon steaks over the sauce - then serve.

Easy Salmon Recipes - Salmon Cups with Creamed Peas

Here's an easy salmon recipe that is simple to prepare in the microwave. It's perfect as a main dish for tonight's dinner!.

Ingredients:

(1) egg, beaten
(1/4) cup of finely chopped onion
(2) tablespoons of fine, dry bread crumbs
(1) 6.75 ounces canned skinless, boneless salmon (canned salmon preferred, or tuna if necessary), drained
(1) cup of fresh or frozen peas
(2) tablespoons of water
(1/4) cup of plain low fat yogurt
(2) teaspoons of cornstarch
(1/2) teaspoon of instant chicken bouillon granules
(1/2) teaspoon of finely shredded lemon peel
(1/3) cup of skim milk


Preparation:

* Stir together the egg, onion and bread crumbs in a medium mixing bowl. Add in the salmon (or tuna) and mix well.
* Divide the mixture into three 6-ounce custard cups. Press the mixture into the bottom, and 1.5 inches up the sides, of the cups and set aside.
* Combine peas and water in a 1-quart casserole dish. Cook on high, covered, for 3-5 minutes or until tender - stirring once. Drain into a strainer and set aside.
* In the now empty casserole dish, stir together the yogurt, cornstarch, bouillon granules and lemon peel - then stir in the milk all at once.
* Cook, uncovered, on high for 2-5 minutes or until thickened and bubbly, stirring after 1 minute then every 30 seconds. Now stir in the peas and keep warm.
* Cook the salmon cups, covered with clear plastic wrap (with holes poked through for ventilation) on high for 2-4 minutes or until set.
* Spoon pea mixture into the individual cups and serve.

Serves 3 - enjoy!
