Easy Salmon Recipes - Broiled Teriyaki Salmon

Here's a broiled salmon recipe that is very simple to prepare and would be perfect as a main dish for tonight's supper!

Ingredients:

(1/4) cup of chicken broth
(2) tablespoons of low sodium soy sauce
(1/4) cup rice wine or dry white wine
(4) 4 ounce salmon fillets
(2) tablespoons of sugar
(2) tablespoons of skinned and grated ginger root


Preparation:

* Combine the chicken broth, soy sauce, wine, sugar and ginger root in a small sauce pan. Bring to a boil, then simmer over medium heat for 5 minutes or until slightly thickened, stirring occaisionally.
* Strain, then discard ginger root. Let the mixture cool.
* Brush both sides of each salmon fillet with soy mixture, then place fillets on a rack coated with cooking spray. Place rack on broiler pan and broil 3 minutes. Turn over, baste, and broil an additional 2 minutes or until the salmon flakes easily. Baste again before serving

Makes 4 servings - enjoy!
